Recipe & Guide - Tomato

Selection and Storage

For a great tomato flavour, never store tomatoes in the refrigerator!
Tomatoes are traumatized by temperatures below 55° F and lose flavour after only a few hours.

Choose tomatoes that are smooth, plump and heavy for their size. They should be firm, yet yield to gentle pressure. Look for good red-orange colour if you plan to use them right away, or slightly yellow if you are going to store them for couple days. Try some of the new varieties. Cherry tomatoes, teardrop yellow and red tomatoes can be incredibly sweet.

Ripen tomatoes stem-up at room temperature. To quickly ripen, place in a paper bag with an apple. If tomatoes are exposed to sunlight, they become soft and lose vitamins A and C.

Preparation and Eating Tips

To seed tomatoes, cut them in half through the middle and squeeze out the seeds and jelly, using your little finger to poke out the rest.

To peel tomatoes, drop into boiling water for 10 seconds, then core, and the peel will slip off easily.
Italian or plum tomatoes are meatier with less juice for sauce. All yellow tomatoes are less acidic than their red cousins.

SIMPLE SALSA WITH LIME – 15 minutes

4 firm, large tomatoes, halved
½ medium onion
Juice of 1 lime
2 cloves garlic, minced
½ cup cilantro coarsely chopped
1 jalapeno pepper, seeded and chopped fine
Pinch of sugar
Salt to taste
Corn chips to dip

Grate tomatoes on largest holes of a hand grater, pressing your fingers flat against the skin. Use a flat hand grater and place it across a plastic bowl. Do not use metal.
If the tomato sauce looks watery, strain a bit out.
Cut the whole onion in half around its middle, peel one half, leaving the end intact so it holds together. Grate it, and add the rest of the ingredients, except the corn chips.
Refrigerate until serving.

Just before serving add more salt and lime to taste.

Makes 5 servings.

Best if flavours can meld in refrigerator for an hour before serving.
