Recipe & Guide - Onion

Good source of Vitamin C

Selection and Storage
Onions should be firm, well-shaped and have smooth, healthy-looking skins. They should not have sprouts or soft or green spots.

Keep dry onions in a cool, dry place. Onions can be stored in the refrigerator for short periods. Store sliced onions in a tightly covered container.
Sweet onions will store well for up to a month, while pungent onions last from 2 to 3 months.

Onion Varieties
BERMUDA: large globe, brown: mild & crisp MAUI: globe, light-brown: mild & sweet

RED ONIONS: large, red-violet: zesty SWEET IMPERIAL: large, yellow-tan:
sweet & mild

TEXAS 1015: mild & sweet VIDALIA: flat, round, golden-brown skin and white inside; sweet & mild WALLA WALLA: large, golden-brown: sweet

Preparation and Eating Tips
Remove papery skin, trim off ends, then slice, chop, mince or grate dry onions.
The longer you cook onions, the sweeter the flavour becomes.

Chopped or sliced onions can be frozen for up to a year and then used in cooked dishes.

For tear-free onion peeling, hold onion under running water, refrigerate early in the day or freeze for 30 minutes before peeling.

MANHATTAN CLAM CHOWDER

1 medium onion
2 potatoes, cut into 1/4 inch cubes
1/4 cup celery, thinly sliced
1 carrot, diced
1/2 teaspoon dried thyme leaves
1 cup clam juice
1 can (398 ml) stewed tomatoes, chopped
2 cans (142 g) minced clams, undrained

In a 3-quart microwave-safe casserole dish, com¬bine potatoes, celery, carrot, onion, thyme and clam juice.
Loosely cover with plastic wrap; cook on high 8 to 12 minutes or until potatoes are tender, stirring once.
Stir in tomatoes and clams. Re-cover; cook on high 2 to 3 minutes or until heated through.

Makes 4 servings.

Serve with salad and crusty French bread.
