Recipe & Guide - Chili Pepper

Turn on the heat at mealtime with distinctive addition of chili peppers.

Chili peppers are available from the market in at least 20 varieties, each having its own unique taste, spice and heat.
Everyone is familiar with spicy Mexican dishes and salsas in which chilies are used abundantly.

Selection and Storage
Select brightly coloured, glossy peppers without gashes or soft spots. Store in bag in the refrigerator.

Preparation and Eating Tips
When working with hotter varieties of chili pepper, you may want to wear plastic gloves. The capsaicin, which makes the pepper hot, also may sting your hands. Be specially careful not to rub your eyes after touching the ribs and seeds of the peppers, which contain much of the capsaicin.

The hottest peppers are usually used in salsas or to intensify flavour in dishes. Stuff the milder chilies, or use them in salads. For milder flavour, chilies are often roasted and peeled. To roast, bake in a shallow pan at 400° F for 25 minutes, until skin is brown and blistered. Remove from oven and place in plastic bag for 30 minutes to cool. Pull off skins and remove seeds and stems.

MUSROOMS WITH GREEN SAUCE – 45 minutes

Serve this luscious sauce over steak and chicken.

3 to 10 Serrano chilies, roasted, de-veined, seeded and cut in strips
3 small cloves garlic
1 large onion, sliced
2 teaspoons vegetable oil
1 pound mushrooms, sliced
8 tomatillos
¾ teaspoon cumin

1. Mince one garlic clove and cook with onions in oil until transparent. Add mushrooms and chilies, stirring well. Cook until chilies are slightly browned and mushrooms are golden.
2. In a blender, liquefy the tomatillos (cut in halves), with 2 garlic cloves and cumin. Add liquid to the mushrooms and cook over low heat for 20 minutes. Add salt to tatse.

Yields 2 cups.
