Recipe & Guide - Alfalfa Sprouts

Also called: alfalfa, clover radish, aress, kaiware

Sprouts have increased in popularity, not only because of their nutritional value, but also because of their great taste and crispy crunch.

A sprout is actually a tiny plant that is very easy to digest and full of food value. Since these delicate sprouts have a high water content, they will fill you up fast, but with few calories-excellent for the dieter.

Take your pick from an array of sprouts available, each with its own distinct flavour that adds a con¬trast of textures to salad, sandwiches and omelets.

Alfalfa-white with tiny green tops: nut-like flavour; tender and crisp

Clover Radish-taller and thicker than alfalfa: spicy and tangy; crisp

Cress/Danish Gardener-like alfalfa, but leafy: spicy and peppery

Kaiware/Daikon Radish-small, pretty sprouts with leafy tops: hot. zippy and peppery; crisp


Selection and Storage
Look for fresh, tender, yet crisp sprouts. Many stores offer sprouts still in their growing trays to ensure freshness. Avoid soggy, limp sprouts, which could indicate age.

To store, either leave in the container they are pur¬chased in or place in plastic bags in the refrigerator for 3 to 7 days.

Preparation and Eating Tips
Sprouts do not need to be washed, but they can be lightly rinsed and dried if desired.
To use, simply remove the amount needed for the recipe. Sprouts -make a superb crunchy addition to salads or to replace lettuce in sandwiches. Use them to garnish plates, or add them at the last minute to soups or egg dishes.


SALAD IN A PITA

1 cup alfalfa sprouts
1 cup carrots, shredded
1 cup chicken, skinned, cooked and diced
1 cup tomatoes, diced
1 cup green peppers, diced
1 cup lettuce, shredded
1/4 cup nonfat mayonnaise
6 pita rounds

1. Place all ingredients except pita rounds in a bowl: toss.
2. Cut each pita in half and fill halves with mixture.

Yields 6 servings.
