Main Ingridient for Alcohol Content in Wine Production The main ingredient for alcohol production is sugar. The acohol content in wine is directly proportional to the sugar content of the must. Sugars belong to family of carbohydrates. For our purposes, they are classified in monosaccharide and disaccharide groups. Monosaccharides have a single unit in each molecule whereby the disaccharide contains two. Fructose is a monosaccharide hexose sugar. It is the primary sugar found in most fruit. Table sugar, sucrose, is a disaccharide sugar composed of glucose and fructose. Simple hydrolysis will break the bond between the two, which produce the monosaccharide components. The fructose is further rearranged to usable form. A majority of the fruit contain significantly less amount of sugar (yield of approx. 6% alcohol) as compared to the grape (usually 12% alcohol by volume). By adding 1 lb of sucrose to the 1 gallon of fruit, the juice will increase the yield to approx. 12% alcohol. To be scientifically correct use the hydrometer and the Balling Scale to determine the exact amount of sugar present in the juice and the amount to be added for desired strength. Bon Voyage
