Importance of Yeast Nutrient in Wine Making Yeast being heterotrophic (require foods from outside source) needs certain nutritional supplements just as humans do, in our diet. The sugars will provide the main course, however this is not enough. They require the micronutrients; vitamins and minerals. The main vitamin being used is thiamine (B1), which is a coenzyme in carbohydrate synthesis. Some of the other water-soluble vitamins with similar coenzyme activity are Riboflavin (B2), Pyridoxine (B6) etc., mainly the B complex. Phosphates (ammonium, potassium, and magnesium) are also necessary for sugar conversion. Potassium is a major intracellular caution. The main activity for the ammonium is for dehydrogenation during the amino acid transformation. The phosphates are used for phosphorylation during glycolosis cycle and magnesium as an activator and coenzyme. Yeast nutrients already mixed can be purchased at your local wine supplier. Whenever you add water and sugar to make wine, add 1 teaspoon of yeast nutrient per gallon of must. It will make a difference. Bon Voyage
